Brownie and salted caramel cookie sandwiches


A friend sent me this recipe after I'd arranged a few weeks ago to meet up with him to hear all about his life. The evening came and he definitely hadn't forgotten the brownie and salted caramel delights he had messaged me about. 

Of course we made them, and of course they were everything we had hoped they would be (and more). Sure, one bite and you know any healthy eating you have ever done in your life EVER is ruined, but they are so flipping delicious who cares! They're rich and sweet as well so that you really can only eat one cookie sandwich at a time. Which I can assure you in these circumstances is a good thing.

You'll get about 14 sandwiches (i.e. 28 brownie circles) out of this recipe, so if you don't fancy sandwiching them together (which is magic, so why wouldn't you) you do end up with a lovely big batch of soft and chocolatey brownies. 

To make brownie and salted caramel cookie sandwiches you will need:
1/2 cup of salted butter (or just 1/2 block of salted butter)
2 1/2 cups of broken dark chocolate (or just 2 standard bars of chocolate broken up)
3/4 cup plain flour
1/2 tsp salt
1/2 tsp baking powder
1 cup caster or granulated sugar
2 tbsp cocoa powder
3 eggs
2 tsp vanilla extract
1 cup milk chocolate chips (or 1 1/2 standard sized bags of chocolate chips)

1 can caramel 
Pinch of salt per brownie


Preheat the oven to 170C and line some baking trays with greaseproof paper

Melt the chocolate and butter together either over a bowl of simmering water or in the microwave with close supervision. Set to one side.

In a large bowl combine the plain flour, salt, baking powder, sugar and cocoa powder. Add to this the eggs and vanilla extract. Pour in the cooled chocolate and butter and beat this really well so that it becomes nice and thick. Pour in the chocolate chips and dollop 1/2 tbsp amounts onto the baking trays. Bake for 8 minutes - by this point the brownies should have cooked and have minimal dimpling when gently pressed. If not, check on them at 1 minute intervals. Allow to cool on the baking trays.

When ready to serve get the caramel and a little pile of salt. Try and pair the brownie circles up before smearing one half with caramel, sprinkling a pinch of salt across the caramel and squidging the other half atop. Try and complete the sandwiching process before devouring a brownie sandwich. If you actually manage to do this you are an amazing person.

Elderflower and white chocolate shortbread

Anyone that knows me will know how obsessed I am with elderflower cordial. For that reason I thought it was about time I started incorporating it into my baking. I found a lovely recipe on Wallflower Girl's blog and decided to give it a go. It was originally going to be a white chocolate and elderflower combination but there was a lonely lemon that I thought would make these even more of a springtime treat.  I managed 2 cake tins worth of shortbread, which equated to 16 slices. To make elderflower and white chocolate shortbread you will need: 250g butter 100g caster sugar 2 tbsp elderflower cordial 1/2 tsp vanilla extract The rind of 1 lemon 300g plain flour 100g chopped white chocolate Preheat your oven to 180C and prepare your baking tins. I went for 2 silicon cake tins to get the classic shortbread eighths but you're welcome to go for a square tin and create fingers...cut out rounds...whatever you fancy! You'll just need to increase the cooking time ...

Beetroot soda bread

This is a super-simple loaf to make when you don't want to wait hours for it to prove. I love the pink-hue you get from adding beetroot to this loaf. It is a good loaf to make to use up the dregs of bags of flour.  Beetroot soda bread Makes 1 loaf 300g beetroot (I used vacuum packed) 1 tsp fennel seeds 100ml plain full-fat yogurt 400g flour (I used 300g plain white and 100g wholemeal flour) 1 tsp sea salt 2 tsp baking powder 50g seeds (I used sesame) Preheat the oven to 220C. Puree the beetroot with the fennel and yogurt in a food processor until smooth. Mix the flour with the sea salt, baking powder and seeds. Fold the liquid beetroot mixture through this. As it comes together you can form into a ball with your hands but do not work too much or the finished loaf will be tough. Scatter some flour on a baking tray and place your ball of dough on top. Chocolate peanut butter squares

These delights came about as a result of watching cookery programmes over breakfast. Never a good idea. Luckily they're being given away to a friend so I can't eat them all myself. This recipe is courtesy of  Lorraine Pascale  so all credit has to go to her for creating something so deeply delicious!
